It has long been a tradition in New Orleans to cook red beans and rice on Monday. Monday was typically wash day and women would put a pot of red beans on to cook while they did the wash. The beans cooked all day while the wash was being done. A ham bone, left over from Sunday's dinner, was thrown in for flavor. The dish is such a part of new Orleans's culture that famous musician Louis Armstrong singed some of his letters with, "Red Beans and Ricely Yours."
